Winter Weather, Baby, Are You There? and Modern Meatloaf

The long weekend is nearly over, I hope you enjoyed the extra holiday if you live in Western Australia. Tonight I share with you Winter Weather, Baby, Are You There? and Modern Meatloaf. Happy Reading xo♥
Winter Weather
Winter has definitely arrived. This series of photographs was taken over 22 minutes and perfectly shows how volatile the weather can be on the South Coast. Sunny one moment then sweeping rain the next it seemed! We did get a little damp at the end of our walk on the coast hills; but it is always amazing to get out there and enjoy nature at its finest!
Baby, Are You There?
Occasionally I feel the need to share an unusual, different or moving music video that has captured my attention. Today it's "Baby, Are You There?" by The Audreys. Read the notes from the band, that they posted to their video on YouTube, watch and enjoy!

The video clip for "Baby are you there?" was a collaboration between The Audreys, Restless Dance Theatre and Goodmorningbeautiful Films. Restless is a dance troupe made up of dancers with physical and intellectual disabilities and I've admired their work for years. When we came up with the idea of inviting them to part of a film clip we decided we wanted steer away from anything over-earnest, so we picked an up-beat song and a light approach. In rehearsals we just played the tune and let people freestyle and come up with their own "signature" moves. We wanted it to be fun and entertaining, and the film noir vibe came about because we were all big fans of that look and era. Filming was done in a day at the Restless studios in Adelaide and many laughs were had. We hope you enjoy."
Pork, Apple + Sage Meatloaf 
The weather is getting much cooler in the evening, being Winter and all. I decided I wanted to make a meatloaf recipe using classic flavours, but with a twist. I found this recipe - a Classic meatloaf which uses lean pork to keep it light and apple to give a little sweetness. You can find the original recipe here:

Ingredients: 
Olive Oil Spray 
1 medium onion, finely chopped 
1 celery stalk, finely chopped 
1 garlic clove, minced 
500g lean pork mince 
1 tsp ground sage or 1 tbsp finely chopped fresh sage leaves
¼ tsp ground cloves 
1 tsp Worcestershire sauce 
1 egg, lightly beaten 
1/3 cup Panko breadcrumbs 
1 large Granny Smith apple, peeled, cored and finely sliced 
salt and pepper 
Prep Time: 15 mins 
Cook Time: 45 mins
Serves: 4

Method: 
Heat oven to 180°C and line a loaf pan with baking paper (using baking paper makes it easier to get the meatloaf out of the pan).  
Heat a small frying pan and spray lightly with oil. Add onion, celery and garlic with a pinch of salt and cook until translucent. Cool slightly. 

Mix all ingredients, except apples, together in a large bowl until well combined. 

Press mixture into prepared pan and line top with sliced apples. Season with salt and pepper and bake for 45 minutes until cooked through.

Remove from oven and stand in pan for 5 minutes. Gently lift meatloaf from pan onto a board and slice. Serve with salad or vegetables.
